Wow! Today has been ultra BUSY. Since I woke up in the morning to when I finally fell asleep, I have been incredibly busy. I’m glad the day is finally over!
Alrighty… Day 28! It has been a ride. But it’s been really nice… I’m glad I decided to do this because by now eating raw food is definitely a habit. I wake up every morning and I never double think making a green smoothie. I just do it. It’s habit now. I rarely, if ever, get cravings for cooked foods. Sure, there are still times when I think about certain cooked foods, but I never crave them to the point where I lose control. As with the grilled cheese sandwich incident a few days ago, I purposefully went out and bought the ingredients I needed because I wanted to know how it was going to affect me. It wasn’t horrible, but it wasn’t great. I missed feeling awesome 100% of the time.
You know, it’s been 28 days so far and I have not run out of dishes to make. In fact, I’ve actually been sort of lazy and have gone back and tried particular dishes multiple times. The important thing to know here is that raw food doesn’t have to be boring. Please don’t think it’s just fruits and salads. It is so much more than that. As we’ve seen here, you can make a variety of cookies, cakes, pasta, salads, smoothies of ALL kinds, breads/crackers, cheeze, mylks, ice cream – pretty much ANYTHING you dream up. You just need a bit of creativity (or some recipe books!) because you’re dealing with a whole new set of foods, but it is worth it. Trust me. You think you feel good right now? You have no idea. Seriously – NO IDEA.
OK, OK… Onto the food!
BREAKFAST
I thought I had made some pretty amazing smoothies up to now, but WOW! I never knew this because Katrina always makes all of the food, but I have to be honest here… I’m pretty bomb at making raw food. I just never did because Katrina loves making it so much and just does it. Well, move over lady because I CAN MAKE SOME PRETTY SPECTACULAR STUFF!
(But really, Katrina is ridiculously fantastic anyway).
Green Smoothie Recipe
- 2 bananas
- 1 red delicious apple
- 2 handfuls of spinach
- 1 tablespoon sesame seeds
- 1 tablespoon chia seeds
- 1-2 cups water
Put all ingredients in a blender and blend until smooth. YUM… Very simple, but VERY delicious. I think my all time favorite ingredients in a green smoothie – you seriously can never go wrong with these basic ingredients – are bananas, apples and spinach. Makes a perfect smoothie every time.
LUNCH
Maggie, this one is for you! I have found a cheesier recipe than last time. This recipe literally tastes like nacho cheese. It was so CRAZY. It blew me away. Literally. I fell down. Ok, I didn’t, but you really weren’t there so how would you know otherwise? BUT… ultra simple… check it out:
Nacho Cheeze Sauce
- 1/2 large red bell pepper
- 1 cup soaked raw cashews (soak for 30 min – 1 hr)
- 1 tablespoon raw tahini
- 2 tablespoons nutritional yeast
- 1 green onion
- 1 clove garlic
- 1 tablespoon lemon juice (or 1/2 of one lemon, squeezed)
- 1/2 teaspoon sea salt (I ended up using a lot more than this, I found the more I put in, the cheesier it tasted. So add to your liking… but be careful to not add TOO MUCH).
- 1/4 cup water (I actually added a bit more, so to your desire)
Noodles
- 1 package of Sea Tangle Kelp Noodles.
Directions for Sauce: Place all ingredients in a blender and blend until smooth. Add more water as necessary. I found that if I first added 1/2 teaspoon sea salt, blended it, then kept adding it to taste… it got cheesier and cheesier. Ahh…. DELICIOUS. I am VERY PLEASED with this sauce.
I made it into a pasta dish, but this nacho cheese would also be PERFECT for just any kind of dipping sauce. I gotta be honest here, though… it was cheesier COLD, or right out of the blender. I did slightly warm up the pasta in a dehydrator and even though it was still cheesy, something happened where it lost it’s INCREDIBLE cheesiness. I guess I still have some work to do to find a warm super cheesy sauce… but if you want a cool/room temp cheese sauce, look no more. It is AMAZING.
DINNER
We went to my mom’s house for dinner. She had a craving for Katrina’s Squash Spanish Rice YumYums from Day 14. Gotta admit… that was a pretty good dish and I haven’t had it in a while. So, we went over to her house and made it together. Turned out great!
Katrina’s Squash Spanish Rice YumYums (slightly edited)
Rice
- 1 acorn squash (peeled, seeded)
- 1 large tomato (chopped)
- 2-4 tablespoon yellow onion (chopped)
- 1 clove garlic (minced)
- 1/4 cup cilantro leaves (chopped; packed if you like cilantro)
- 1 teaspoon salt
Sauce
- 1/2 tomato or 1 large roma tomato (chopped)
- 2 tablespoons raw honey
- 1 teaspoon olive oil
- 1/2 of a hot red pepper
Directions for Rice: Process the squash in a food processor using the S blade into a rice-like consistency and transfer to a big bowl. Add the other ingredients and mix well.
Directions for Sauce: Blend in a blender or food processor and pour over the rice. Mix well and serve.
BOMB! Super delicious… my mom said it tastes like ceviche, a traditional Mexican dish we used to eat all of the time at home. Ahhh, yums.
