100% Raw Foodist – Day 27

Wow. What a gorgeous day today! Sure, leave it up to Earth Day to be perfect. It was pouring earlier today, but now it is simply DIVINE! I want to go run outside! Maybe after this post. :D

Today has been a mellow day. I’ve been enjoying being home and making some yummy raw food. I am pleased to announce that I have made all of the raw food I am posting today and I had so much fun making it all! It’s amazing how wonderful it feels preparing fresh, live, delicious raw food. It’s a completely different experience from cooking food because you know that 100% of the food you will soon be eating is the best food you can possibly eat ever. Not to mention how fantastic and light you will feel after you eat it as well. Truly the best food ever.

BREAKFAST

OK, I just threw some stuff together this morning and it came out being one of the BEST green smoothies I have made since I started documenting these 30 days. WOW! It was incredibly delicious… and it almost tasted like a malt milkshake. Very weird. But very awesome.

Green Smoothie Recipe

  • 2 bananas
  • 1 big mango (flesh only, no peel)
  • juice of 1 valencia orange
  • 1/2 bunch rainbow chard
  • 1 big handful spinach
  • 1 tablespoon chia seeds
  • 1 tablespoon flax seeds
  • 1 teaspoon maca powder
  • 1-2 cups water

I just threw random stuff in. Lately I’ve been getting hooked on the chia and flax seeds combo. They’re so tasty and ridiculously good for you. Why not add them in? This is the second time I have tried maca powder in my smoothie and I must say… I think I’m becoming a huge fan of it now. The first time was kind of… odd. This second time was FANTASTIC. It literally transformed my typical fruity green smoothie into a type of MALT milkshake type of drink. Really awesome… loved every second of it. Hope you enjoy it too.

LUNCH

Lunch was easy peasy. I made a ton of the pico de gallo yesterday, so I just went ahead and used up the rest of it today. Can lunch get any easier than this?

If you want something super easy… just make a ton of it the first day and refrigerate it until tomorrow. Ultra simple raw food on the fly. Who says convenience doesn’t exist in the raw lifestyle?! There you go. You’re welcome.

DINNER

Probably not so much of a dinner but a dessert. I tweaked Katrina’s original cookie recipe and replaced it with my ultimate favorite nut in the world: RAW PECANS. I’ve always loved them. They’re simply the best, that’s all. :D

Lucy’s Chewy Oatmeal Chocolate Awesome Raw Power Cookies

Cookie Base

  • 3/4 cup raw pecans
  • 1/4 cup raw walnuts
  • 1/4 cup rolled oats
  • 2 tablespoons raw honey
  • 1/4 cup dates
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1 cup raw cashews
  • 1/4 cup water
  • 3 tablespoons raw honey
  • 2 tablespoons raw cacao powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Directions: Place all of the cookie base ingredients in a food processor (using the S blade) and let-er-rip until it is the consistency you would like. Take a small handful and form into a cookie. Repeat until you have about 4-5 cookies. Then take all of the chocolate topping ingredients and place in the now empty (and hopefully now cleaned) food processor. Still use the S blade and blend until it’s smooth (there will be some small cashew chunks in there – that’s OK). Put the chocolate topping on top of the cookies and you can either enjoy right then and there – OR! – put in the freezer for a bit and enjoy later as a cold, tasty treat. Fo sho!

Now, this is the part I can gloat for a bit. I made these for Katrina (she always makes me raw food, so I thought I’d return the favor) and GUESS WHAT SHE SAID?! She said that my cookies were soooooo much better than hers! That’s right, that means that I am technically better in every possible way. So, that’s a self-esteem booster right there. YAY! :D

    Nice idea of adding maca to a green smoothie, I’ll have to give that a try. I was wondering…. where is a good place to get raw pecans, walnuts and cashews?

    Hey Mitch! I usually get my raw nuts at Whole Foods. I went to Sunflower Market once and was not impressed at ALL by their “raw” nuts. They looked terrible. So far the best place to go locally that I’ve found is Whole Foods. Funny you mention those three nuts… I JUST got home and bought some of each. Awesome!

    Thanks, Lucy. I’ll avoid the nuts at Sunflower. Yeah it seems like its important to be careful where raw nuts are purchased at due to the fact that some are really not raw like they say they are. I imagine new legislation regulating the word ‘raw’ when written on food packaging or used in marketing. If we had that, then we could be confident that they truly are raw, similar to how the term ‘organic’ is regulated. If its on a package, it must legally meet certain standards. It would be nice to have the same standard for raw foods.
