WOW! Day 20 already?! I can’t believe it. The days are just flying by.
Today my body has been very mellow. I’ve pretty much been water fasting all morning and I finally had some food around dinner time. I’m trying really hard to listen to my body and only eat when I’m genuinely hungry. It sounds easy, but it actually takes some hardcore dedication. We are so used to eating and snacking all of the time that when you actually try to NOT eat unless you’re genuinely hungry, it’s proves to be pretty difficult. Thankfully, I’ve been doing this for a while now so it’s not as hard as it used to be.
In other news, we finally found a new home for Charlie (again). He just left with his new family about an hour ago. He seemed pretty happy and the family seemed like a perfect fit for him. I hope it works out and that they’re happy.
Today has been super busy! Like I mentioned earlier, I didn’t eat until almost dinner time. We attempted to make a cheesy kelp noodle dish and ALTHOUGH IT WAS SUPER DUPER AWESOME DELICIOUS… it wasn’t cheesy enough. I’ll have to keep looking for that super cheesy sauce recipe. It’s out there… somewhere.
But seriously, this kelp dish was AWESOME. It tasted more like an alfredo than a cheese dish. I found the recipe for it on LovingRaw.com. The recipe below is straight from thee website, but the picture posted is the pasta we made tonight. Enjoy!
“Cheesy” Pasta Dish
Spaghetti noodles:
- 3 packages of kelp noodles (12 oz each)
Veggies to fold in:
- 1 c button mushrooms sliced very thin
- ½ c red bell pepper finely diced
- 1 green onion chopped
White cheddar cheese sauce:
- 2 c soaked cashews
- 2 c pure water (a little less if you desire a thicker texture)
- 3 TB lemon juice
- 1 ½ TB light miso
- 2 1/2 tsp salt
- 1 tsp cracked black pepper
- 2 tsp garlic powder
- 1 TB nutritional yeast (optional)
- 1/8 tsp white pepper (optional)
- Pinch of cayenne
Step 1: In high speed blender blend all sauce ingredients until smooth and creamy…
Step 2: Pour sauce over noodles. Fold in veggies. Toss well. Get your hands in there if need be!
Step 3: Place dish in dehydrator at 120° until warm or on stove top on very low heat to soften and warm the noodles.
Serving this dish warm is encouraged!

The recipe was superb! Finally! I get to eat a raw dish that tastes SO MUCH LIKE TRADITIONAL PASTA! It blew my MIND. So worth it… loved it. However, it was not as cheesy as I would have liked. So… still on the prowl for a super cheesy recipe. I’ll let ya know when I find it!

ps. Oh, before I forget… Katrina and I couldn’t really wait to try it so we didn’t dehydrate it for nearly as long and it was still cold but MAN WAS IT GOOD. I’m sure it would have tasted much better warmer… but who cares. Way too excited. Still excellent. Eat it however you’d like.
