100% Raw Foodist – Day 19

Today has been a very simple and light raw food day for me. A delightful smoothie in the morning followed by a wholesome tomato soup for an early dinner. Very satisfying. My body is happy.

I’ve been dreaming of that raw cheesy kelp noodle dish I am wanting to make from yesterday’s post. A friend wants to know how to make a cheese sauce. Since she mentioned it, I can’t stop thinking about it because I’d really like to know too. :) I have to wait, however, until the next paycheck to purchase more ingredients. I love making raw food, but money has been tight since I was laid off about 2 weeks ago. But life is still good and even though money is tight, I won’t let it get in the way of my very healthy raw food. I’d pretty much be willing to let go of everything else except my health. That’s important. I’ll always have enough for wonderful, fresh, organic produce. Fo sho!

BREAKFAST

Ahh, the breakfast of champions: Green Smoothies! You’d think I’d eventually get tired of drinking a green smoothie every single morning, but you’d be surprised at how many different ways you can make a green smoothie. You can make it super green and enjoy the heavenly, sometimes intense taste of greens. Or perhaps you can take the fruity trip and load it up with all of your favorite fruits. You can add honey, cacao powder, maca powder – pretty much ANYTHING you want. Green smoothies can be OUT OF THIS WORLD! I usually prefer very simple smoothies because my body reacts the best to them, but please – go crazy!

Today’s simple smoothie:

Green Smoothie Recipe

  • 2 bananas
  • 1 rainbow pear
  • 1 cup strawberries
  • 1/2 bunch green leaf lettuce
  • 1/2 bunch parsley
  • 1-2 cups of water

Simple. Delicious. Satisfying. I mostly made this smoothie out of leftover fruits/greens in the fridge that needed to be used up PRONTO! I think this specific smoothie really hits the spot if you’re looking for a slightly less fruity, more green taste. MMMMM! I am really tasting the parsley. My favorite.

LUNCH/DINNER

Mmmmmmmmmmm!!!! I don’t know what I would do without Katrina’s super on-the-spot creativity around here. She definitely knows how to put left over ingredients together to make something AWESOME.

Katrina’s Tomato Soup

Rice

  • 1/2 small butternut squash
  • 1/2 cup walnuts
  • 1/4 cup cilantro
  • pinch of sea salt

Soup

  • 1 1/2 cups tomatoes
  • 1/4 cup water
  • 1 clove garlic
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon sea salt
  • 1 tablespoon olive oil

Directions for Rice: Process the squash in a food processor using the S blade until it is almost a rice like consistency. Then add the walnuts and cilantro and pulse until it’s rice like.

Directions for Soup: Blend all soup ingredients in a blender. Put in a bowl with the rice and ENJOY!!!!!!!!!!

Very easy tomato soup with some crunchiness for a super satisfying texture. YUMMMMMMMMMMM!
