Again, I am posting yesterday’s post today… Sorry!
Yesterday was AMAZING. I think I’m starting to get over the detox a bit because I have been feeling INCREDIBLE. Yesterday and today I have felt energized, light, inspired, motivated and ready to go. I wake up in the mornings easily and wanting to go out into the world and do a bunch of awesome stuff.
At the moment I am sitting at the library down the street working on this post. Ahhh, such a wonderful day so far. The weather is fantastic, the atmosphere is calming and quiet and I’m surrounded by books. How could this day get any better? I have no idea, but it probably will.
I kinda sorta skipped breakfast and lunch yesterday and just drank water all day. I wasn’t hungry! I was also busy all day helping my dad figure out how to go about filing a Small Business Claim. We went to a class and studied all day. I thought it was going to be boring, but I actually ended up having a ton of fun. I learned a lot and I got to help out my dad. Sweet.
DINNER
I’ll make this post short because I have today’s post to work on as well. Hehee. My parents came over yesterday and Katrina made them a raw mock version of Spanish Rice. It came out brilliant! Check it out:
Katrina’s Squash Spanish Rice YumYums
Rice
- 1 acorn squash ( peeled, seeded and chopped into 1-2 inch cubes)
- 1 large tomato (chopped)
- 2-4 tbsp of yellow onion (chopped)
- 1 clove garlic (minced)
- 1/4 cup cilantro leaves (chopped; packed if you like cilantro)
- 1 tsp salt
Sauce
- 1/2 tomato or 1 large roma tomato (chopped)
- 2 tbsp agave nectar
- 1 tsp olive oil
- 1/2 hot red pepper
Directions for Rice: Process the squash into a rice-like consistency and transfer to a big bowl. Add the other ingredients and mix well.
Directions for Sauce: Blend in a blender or food processor and pour over the rice. Mix well and serve.
It really came out awesome. My dad had the divine idea of adding avocado to the dish and I must say, it made it better! Feel free to add to or adjust the recipe however you’d like. Make it your own and have fun with it. There is no one way to make raw food.
DESSERT
Dessert, of course, was some left over brownies from 2 days ago. Everyone enjoyed it tremendously. They are always a hit.
Well, that’s pretty much it for yesterday’s meals. I was very impressed with the Raw Spanish Rice that Katrina came up with. It tasted divine! I personally would have added a bit more hot peppers but that’s only because I like it spicier. I also added more salt, but it turned out to be too much salt and I ruined my first plate. Oops! But I recommend playing with the recipe to find out what you like. Maybe you’ll end up improving the dish so much more for your own tastes/likes. Everyone is different!
